the arching of the hypocotyl in the seed pulls the Cotyledons and epicotyl out of the seed coat. the epicotyl, being negatively geotropic, grows upward out of the soil. it will develop into the stem and leaves. in most dicots, by the time germination occurs, the Cotyledons will have completely absorbed the endosperm. they now serve as reserves of food for the growing seedling until it has developed enough chlorophyll to become independent, at which point they shrivel and fall off.
